Digby Scallop Days

I guess everybody knows that scallops come out of a shell, but I never realized how fast they can be separated from their shells until I saw a group of scallop shuckers showing off their skills at a recent competition in the town of Digby that bills itself as the World Scallop Capital.
Fishing, particularly scallop fishing, has traditionally been the mainstay of the economy of this Annapolis Valley town. The process of separating the tasty scallop from its shell is called shucking and the guys who do it are shuckers. And aw shucks! These Digby guys are among the best.
 Shells were flying in all directions as eight of Digby's top shuckers using special knives opened shells and removed scallops at a furious pace. Best of all, the scallops were later cooked and served to people attending the annual Digby Scallop Days. The festival is now over for another year, but anytime is a good time for feast of scallops fresh off the boat in Digby. And best of all, you don't have to risk a finger or two shucking them yourself.
